You have your breakfast at 6.20 am,i wouldn't bother with the whey first thing it means getting up even earlier, sleep and rest are just as important.

Breakfast whey with a large bowl of porridge or weetabix milk sugar, scambled eggs beans toast, omelette with cheese, ham, shrooms, toms ect. toast.

meal 2,add some salad and more beefto the beef roll bit mayo, piece of fruit, small carton milk or whey shake can rice pudding, packet oatcakes cheese one are very nice, fruit.

meal 3, chicken pasta add some chopped toms cucumber salad, some sort of sauce, instead of pasta have rice or baked pot, couple tins mackrel.

meal 4 as above or as meal 2

meal 5,handful of nuts, milk, piece of cheese more of a snack really.

meal six dinner, home cooked meal is fine as long as its something decent.

Before bed,any combo of,hard boiled eggs,cheese,tins mackrel,pilchards,nuts,cottage cheese,quark,steak.

Looking at the diet you posted it looks very bland dont be scared to add sauce bit mayo seasonings ect.

Quick snack ideas, tinned fish, nuts, milk, cheese, fruit, rice pudding, cheese oatcakes, tuna cottage cheese makes a nice combo for sarnies topping for baked pots.

Double your carbs. 60g of pasta is not much. Try cooking around 100g of pasta.

Eat it and you tell us in 4 weeks time. No one can answer the question of how much calories you need joe. You can figure out a rough figure but at the end of the day it's down to trial and error. Just stick to the diet then consider change. Since you've been posting on here and MT have you made any progress? Have you stuck to a diet? What diet?

As above mate^^^ you might not grow on 2500cals for example ,some people add 500cals and grow ,some people need to double that ,one thing mate ,dont be surprised if its way more than you'd think .

Stick out a diet same as a you would a training program ,your body will desperatley try to maintain equiblibrium [sp] and you will not notice changes as quick as you like .

Stick to a gameplan mate ,thats what big boys did/do ,see it thru ,make micro adjustments as you learn about your bodys responses which wont be for awhile yet ,optimise your recovery times ,hammer your workouts and eat in a controlled fashion and you wont get fat or atleast not superfat.

Its not lack of cals or lifting determination that stunts people in the early stages mate ,its almost a abundance of every-angle info causing them to go left, right up and down at once ,everyone want a inch on there arms next month but a visible 6 pack the month after that.

If I could start with what I know now I'd be....ummm...bigger! .

Doesn't look like enough to me. Although everyone is different. Joe, don't be afraid to add in some sauces etc and it's okay to include a little bit of junk now and again, as long you are taking in a surplus of calories you will grow. The quality of calories will determine how much of that weight gain is muscle/fat/water.
